Did you know dukkah is Gaza’s solution to zeit ou zaatar because they are a coastal town, where wheat rather za’atar grows in abundance. The base is made from roasted and blended wheat berries along with other whole spice grains like cumin, coriander, caraway, dill seeds, sumac and sesame. My father in law used to carry his very own mixture with him when he used to come visit us in the US from Ramallah. Dukkah with labaneh and zeit was a must in the morning!

The Gluten Free Dukkah recipe uses roasted raw chickpeas instead of the standard wheat berries.

  • Mixed in some labneh with olive oil.
  • To season your salads with or flavor your hummus dip.
